Buffalo meat is very lean so be sure to not over cook it. You can substitute buffalo meat for beef in any recipe, but because it doesn't have the fat content it cooks more quickly. Steaks should be eaten rare to medium so that they are juicy and tender. Many enjoy marinating steaks before cooking. Slow cooked buffalo roast is a treat at our house. It smells delicious and tastes even better.
