Powerful Peppers - WOW!

What you need:

1 red pepper

1 green pepper

1 yellow or orange pepper

onion

portabella mushrooms, if you want

salt, pepper, Olive Oil or any low saturated fat, non-trans fat margarine

whole wheat sub roll

low fat or light mayo

some garlic powder

This is simple and tastes great and it is vegetarian, but don’t tell anyone. Simply put some olive oil or olive oil margarine in a small frying pan (you can use less fat in non-stick pans), sprinkle some garlic powder (as much as you want) and heat until the garlic turns brownish. At that point, add cut up peppers, mushrooms, and onions, salt and pepper, and cook on low medium heat until everything is tender, but not mushy and still having a great, bright color. Stir in some Cajun seasoning to taste, we like the dish spicey! Cut the wholewheat sub roll (you can use any other type, if you want) in half, spray with butter spray, sprinkle with garlic and toast. Put mayo on both sides of the roll and some of the delicious cooked peppers/mushrooms/onions in the roll. Serve on a plate having some big, thick slices of tomatoes on a bed of lettuce, sprinkled with green onions and some low-fat dressing if you want. We like lite Raspberry Walnut Vinaigrette. You will love this meal. It is quick, easy, delicious, and nutritious.
