Buttermilk Pancakes
1 c. flour
1 T. sugar
1 t. baking powder
½ t. baking soda
¼ t. salt
1 c. buttermilk
¼ c. milk
1 egg
2 T. butter, melted
Heat frying pan. Combine dry ingredients. Whisk together milks, egg and butter. Mix wet into dry.
Deb’s Pancakes
2 c Flour
1 tsp salt
4 tsp baking powder
2 T sugar
1/3 c powdered milk
2 T syrup
1 egg
1 c milk
1 c water
4 TB melted butter
Combine dry ingredients. Add liquid EXCEPT BUTTER. Stir together. Then add melted butter. Should be lumpy. Cook on griddle.
Raspberry Bran Muffins
¼ c. sugar
¼ c. oil
1 c. flour
¼ t. salt
1 c. raspberries
1 beaten egg
1 c. milk
3 t. baking powder
1 c. wheat bran
Stir together dry ingredients. Make a well in center. Combine egg, milk and oil. Add to dry mixture. Stir until moistened. Fold in berries. Bake in greased muffin pan or muffin papers. Fill 2/3 full. Bake at 400 for 20 minutes. Makes 12
Banana Bread
½ c. butter
1 c. sugar
2 eggs
1 c. mashed bananas
2 c. flour
½ t. baking soda
2 t. baking powder
¼ t. salt
Mix all ingredients together and pour into greased loaf pan. Bake at 350 for 40 minutes.
Pulla – Finish Sweet Bread
2T. yeast
¼ c. warm water
2 ½ c. milk
1 ½ c. sugar
1 c. butter
1 t. salt
6 to 8 cups flour
3 eggs
Dissolve yeast in water. Combine milk, sugar, butter and salt over medium heat. Cool to lukewarm. Stir in 1 c. flour and beat well. Add yeast mixture and eggs. Add enough of remaining flour to make soft dough. Keep adding flour until you have soft dough, it will be sticky. Turn dough into a greased bowl and cover. Let it rise for 2 hours. Punch down and let rest for 10 minutes. Divide into 6 parts and roll into snakes. Braid 3 together and place on baking sheet. Brush with egg white. Let rise for 30 minutes. Bake at 350 for 35 minutes. Makes 2 loaves
Sweet Rolls
4 c. milk, scalded
4 eggs
½ c. shortening or butter
4 t. salt
9 t. yeast, softened in 1 c. warm water
½ c. sugar
13 – 14 c. flour
Dissolve yeast in water. Combing milk, butter, sugar and salt and cool to lukewarm. Add 4 c. flour and beat well. Add eggs, yeast and beat. Gradually stir in remaining flour to make soft dough. Knead on lightly floured surface for at least 5 minutes. Place in greased bowl, cover and let rise until doubled in bulk. Punch down and let rest for 20 m. Roll out ¼ dough into a rectangle about ½” thick. Brush with butter and sprinkle with ½ c. sugar and 1 T. cinnamon. You may add raisins, nuts, etc. Roll and cut into 1” strips. Let rise to double and bake at 375 for 15 minutes. Cool and frost.
Dinner Rolls
3 c. flour
2 T. yeast
1 t. salt
2 T. sugar
¼ c. powdered milk
1 ¼ c. warm water
1 egg
8 T. melted butter
Place 2 c. flour in mixing bowl. Add yeast, salt, sugar and dry milk. In another bowl combine water and egg and mix. Pour water mixture into dry mixture and mix by hand. Add ½ of the melted butter. Add remaining flour gradually and cover in bowl. Let rise for about 1 hour. Grease muffin pan with butter. Punch down dough (it will be sticky) and drop into muffin pan. Brush dough with ½ of the remaining butter. Let rise uncovered about 30 minutes. Bake rolls at 400 for 15 minutes. Brush tops of rolls with remaining butter. Serve warm. Makes 12 large rolls.
Bran Muffins
2 c. All Bran
2 c. boiling water
1 c. butter
2 ½ c. sugar
4 t. soda
4 eggs
1 ½ t. salt
5 c. flour
4 c. All Bran
1 quart buttermilk
Mix 2 c. bran and boiling water and set aside. Cream butter, sugar, eggs, salt, soda, flour and buttermilk. Add 4 c. bran. Store in refrigerator. Stays good for 6 weeks. Bake in muffin pans at 375 for 20 minutes.
Popeye Pancakes
3T butter
½ c. flour
3 eggs
¼ t. salt
½ c. milk
Melt butter in 8x8 glass pan. In separate bowl mix together flour, eggs, salt and milk. Fold into butter. Bake at 400 for 15 minutes. Serve with syrup.
Bread Maker Rolls
1 c. very warm water (115 degrees)
1 egg
3 T. sugar
3 T. oil
1 t. salt
1/3 c. powdered milk
3 c. flour
2 t. yeast
Mix together in bread maker and set to dough setting. When finished, divide dough into 16 rolls and place on cookie sheet. Let rise at least 30 minutes. Bake at 350 for 10-12 minutes or until golden.
Corn Bread
2 c. flour
1 c. cornmeal
1 t. salt
1 ½ T. baking powder
1 T. sesame seeds
1 egg, beaten
2 ½ c. milk
2 T. oil
In Dutch oven skillet, pour in oil and sesame seeds. Place in 400 degree oven for 2 minutes. Mix all other ingredients and pour over oil and seeds. Bake for 20 minutes.
Carol’s Potato Rolls
1 T. yeast
½ c. warm water
1 c. scalded milk
2/3 c. shortening or butter
½ c. sugar
1 ½ t. salt
2 eggs
1 c. mashed potatoes (warmed)
5 – 6 c. flour
Dissolve yeast in water. Set aside. Scald milk and let cool. Cream together butter, sugar and salt. Blend in eggs and potatoes. Add yeast and 2 c. flour. Mix well. Add enough flour to make a medium stiff dough. Knead for a few minutes. Place in greased bowl. Cover and let rise for 1 hour. Punch down and let rise again until doubled. Shape into rolls. Cover and let rise until doubled. Bake at 370 for 20 minutes. (Usually takes 4 – 5 hours to make this recipe.)
Irish Soda Bread
4 Cups all-purpose flour
4 Tablespoons sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 ¼ teaspoons sea salt or kosher salt
½ stick cold butter cut into ¼ inch dice
1 ¾ cups cold buttermilk, shaken
1 extra-large egg, lightly beaten
1 teaspoon grated lemon zest
1 cup raisins mixed with 1 Tablespoon of flour until well coated
Preheat the oven to 375° F.
Line a ceramic pan or sheet pan with parchment paper.
Combine the flour, sugar, baking soda, baking powder, and salt in large mixing bowl.
Add the butter and mix together with hands until the butter is mixed into the flour as pea-size chunks.
With a fork, lightly beat the buttermilk, egg, and lemon zest together in a measuring cup.
While stirring, slowly add the buttermilk mixture to the flour mixture.
Mix the flour-coated raisins into the dough. The dough should be fairly wet.
Dump the dough onto a well-floured counter and knead it a few times into a round loaf .
Place the loaf on the prepared sheet pan and parchment.
Cut an X into the top of the bread with a serrated knife – ½ to ¾ inch deep cuts.
Bake for 45 to 55 minutes at 375° F. When you tap the loaf, it will have a hollow sound.
Cool on a wire rack. Serve warm or at room temperature.
Bread Maker Bread Dough
1 Cup Water Warmed (110 - 115 degrees)
2 Tbsp Milk
2 Tbsp Oil or melted butter
2 Tbsp Honey (or not)
2 Tbsp Brown Sugar
1 tsp Salt
3 Cups Bread Flour. (Or 1 Cup whole wheat flour and 2 Cups Bread Flour)
2 tsp Active Dry Yeast
1. Heat 1 cup of water to 115 degrees. (If you don't have a thermometer, just use hotish tap water)
2. Put all ingredients in the order above into bread machine (you don’t need to stir it , just dump it in!) Water, milk, oil, honey, brown sugar, salt, flour, then finally - yeast.
3. Set bread machine on dough setting, press Start. (let it make the dough for you - abt 90 minutes)
4. With well floured hands remove dough from bread machine, smooth into loaf shape and place in greased & floured loaf pan.
5. Let dough rise for 30 minutes to an hour, until it's around double the size.
6. Bake the bread in 350 degree oven for 30 minutes.
7. Let it cool for 20 or 30 minutes, enjoy.
