Crockpot Shredded Chicken


4 boneless skinless chicken breasts

1/2 cup low sodium chicken broth

3/4 teaspoon seasoning salt (I use Lawry’s)

1/2 teaspoon Italian seasoning

1/4 teaspoon black pepper



Mom's Chili


2 lbs hamburger - drain

2 cans beans (Bush's Best Chili Hot Beans)

2 qts tomatoe juice

1 tsp chili powder

shake of onion flakes


Enchilada Casserole


2 lbs Hamburger

2 bags Doritos

1 can Campbell’s Cream of Chicken soup

1 can Campbell’s Cream of Mushroom soup

2 cans Old El Paso Mild Enchilada sauce

1 lb Velveeta 


Brown and drain 2lbs hamb

Spray Bottom of 9x13 pan with cooking spray

Crush and place 1 bag Doritos on bottom of pan

Mix and heat: hamb, cr chicken, cr mushroom, mild enchilada sauce

pour over doritos

slice velveeta in sheets and place over top, completely cover

Bake 350⁰ 30 min


Serve with lettuce salad or add salsa & more crushed Doritos on top

Cover and cook on low for 6-8 hours or high for 3-4, stirring occasionally.
