Quality Natural Beef, Locally Raised on Wisconsin's Scenic Prairie
We sell beef by the quarter, half (side) and whole beef based on the hanging weight. The cost of processing the beef (cut, wrap & freeze) is paid directly to butcher and is in addition to what we charge. The cost of processing will depend on the options you choose.
Our quarters are actually “half-sides” so you will be able to get the same cuts as a half or whole beef, just less of them.
Each quarter will have a “hanging weight” of about 180 - 220 pounds. The hanging weight is the weight of the carcass before it is fully processed.
Each quarter typically yields about 110 – 140 pounds of packaged beef.
The meat is processed at Hoesly Meats in New Glarus. They are a licensed and state inspected facility. If you would like it processed somewhere else, please let us know and we will see if we can accommodate your wishes.
All meat will be frozen when it is picked up and generally keeps well in the freezer for at least a year.
Each quarter beef will require about 8 cubic feet of freezer space (2’x2’x2’).
