This project is worth 3 lab grades, and 1 test grade. During this project you will explore what “food chemistry” is and how important it is to our society. You will choose an ethnicity origin for your topic e.g. Italian, Chinese, American, Mexican. Then you will select a dish from that culture and you will research it. After your information is collected, you will prepare a recipe, a calorie count for its consumption (i.e. must be in Metric Units) http://www.worldwidemetric.com/measurements.html , and provide an alternative to its preparation, alternative being a healthier version. Provide a food pyramid and explain where your dish would fall in one of the categories. You will need to research the calorie count for your dish in comparison to a similar serving size at a restaurant. You will keep a food diary and find out what your calorie consumptions is on that day. Finally, you must prepare one of your dish versions, the original or the healthier version. It must be fully ready to serve on the due date. If it needs to be refrigerated it must be dropped off the morning before classes start so that it can be placed there before the school day starts. Please make your dish large enough so that each student in class may have a sample. (Sample being 2 bites). A portfolio and a power point presentation are also required.
