The game PCB is aligned to the wiring for whatever monitor it came with. When I got the game, it didn't have a monitor so I put a spare Wells Gardner 19K4901 in it. The wiring is different on the 4901 so here's a description of the wiring changes I had to do. It's pretty straightforward.
Venture PCB:
1 Red
2 Green
3 Blue
4 Hsync
5 Vsync
6 Ground
WG4901:
1 Red
2 Green
3 Blue
4 Ground
5 Vsync (+)
6 Hsync (+)
7 Ground
8 Vsync (-)
9 Hsync (-)
The 4901 has connections to work with just about any game so not all pins are used when connected to Venture. Just hook up the r/g/b/ground and the sync that works with your game. On the WG4901, I ended up using pins 1-6 (R/G/B/Gnd/Vsync+/Hsync+) and left 7-9 empty. It didn't sync right away, had to adjust the horizontal frequency pot to dial it in.
Here's the video connection to the K4901:
