A Belgian lab works to improve beer flavor by creating new strains of the yeast. The article in Nature describes how the lab influences the flavour-giving molecules produced as by-products of fermentation turning the beer into "banana milkshakes" by which they mean that the taste is as bold and manipulable. Currently, the lab uses "natural" techniques to adjust the yeast's genome such as directed evolution and selection, but it would be much more efficient to use CRISPR. But would this make the beer classified as a GMO?
