Creamy Green Gold Sauce

Nice addition to our coconut fish taco. I pair it with a mango salsa.

  • 1/2 cup mayonnaise
  • 1 ripe avocado
  • 1 small bunch of cilantro, leaves only and lightly chopped
  • 1 garlic clove, crushed
  • 1/2 fresh lime juiced
  • 1 fresh Jalapeno pepper minced (adjust heat by removing or leaving veins of pepper)
  • Season Salt to taste
  • Pepper to taste

Preparation

  1. Combine all the ingredients in a food processor or blender.
  2. Blend or mix until you have a smooth sauce. Taste and adjust the amount of peppers as desired.
  3. The sauce can be made ahead of time and refrigerated until ready to serve. (about two days)(earlier may brown the sauce)
  4. If sauce needs to be thinned add a little oil or additional juice
