Creamy Green Gold Sauce
Nice addition to our coconut fish taco. I pair it with a mango salsa.

- 1/2 cup mayonnaise
- 1 ripe avocado
- 1 small bunch of cilantro, leaves only and lightly chopped
- 1 garlic clove, crushed
- 1/2 fresh lime juiced
- 1 fresh Jalapeno pepper minced (adjust heat by removing or leaving veins of pepper)
- Season Salt to taste
- Pepper to taste
Preparation
- Combine all the ingredients in a food processor or blender.
- Blend or mix until you have a smooth sauce. Taste and adjust the amount of peppers as desired.
- The sauce can be made ahead of time and refrigerated until ready to serve. (about two days)(earlier may brown the sauce)
- If sauce needs to be thinned add a little oil or additional juice
