Now, did you think it was going to be THAT easy to get the

world famous recipes of Kate Centunzi Gallo. If you want her recipes for

cannoli, giuggiulena cookies, manicotti, biscotti, and many others,

you are still going to have to ask her yourself!

Now, as a consolation, I will give you Lucia Petralia Centunzi's

famous bread recipe. This is from a handwritten recipe given to her

daughter Anna Centunzi DuRocher sometime in the 1970's.

6 cups flour

2 packages dry yeast

2 teaspoons salt

2 cups lukewarm water

Sesame seeds

In a bowl, mix 2 cups flour, yeast and salt.

Add 2 cups lukewarm water.

Beat for a few minutes.

With a spoon, stir in as much of the remaining flour

to make a stiff dough that is smooth and elastic.

This last step should take 8 to 10 minutes.

Shape in a ball and place in a lightly greased bowl,

turning to grease the surface.

Cover, and let rest in a warm place till double.

Punch down, and turn on a floured surface.

Place on a board, cover, and let set for 10 minutes.

Divide into 2 loaves, place in bread pans, and cover

with sesame seeds.

Cover and let rise for 45 minutes.

Bake at 375 degrees F. for about 40 to 45 minutes.

Enjoy with a steaming hot mug of coffee and milk,

occasionally dipping the hard crust in your coffee.*

This dough can also be fried, and sprinkled with sugar

for a wonderful treat!
