2. Fried Rice Recipe

For 3-4 servings

Cooking Utensils:

- Chinese-style wok or pot. I use a 6-qt nonstick pot.

- Spatula

Ingredients:

- Jasmine Rice: 2 cups (before cooking, with measuring cup comes with rice cooker)

- Your choice of protein 1/3 - 1/2 lb (chicken, shrimp, etc.)

- 4 eggs

- 1/2 onion, slice into medium sized strips

- 4 leaves of Chinese broccoli, separate in stem and leave parts. Stem part, cut into 1/2 - 1 inch strips. Chop leave part.

- 2-3 cloves garlic, finely mince.

- 1 green onion, cut into 1/2 inch strips

- 1 small tomato (optional), cut into 1-inch dices

- 3 tablespoons of soy sauce (or adjust to your preference)

- 3 tablespoons of oyster sauce (or adjust to your preference)

- 2 teaspoons of sugar

- pinch of black pepper

- Cooking oil (see below for the amount)

Note:

- Adding tomato makes the fried rice tasty, but soggy. If you prefer "dry" texture, I recommend not to use tomato.

- Also, the purpose of cooking veggies and meat separately is to make the fried rice dry.

Instruction:

(1) Cooking rice: Cook rice with slightly less water than normal. Cool the rice to room temperature, which takes at least a few hours. Loosen rice to smaller chunks.

(2) Cook eggs: Lightly beat eggs. Heat 2 tablespoons of cooking oil. Cook eggs just like making "scrambled" omelet. Let eggs absorb all cooking oil. Then, remove from the wok.

(3) Lightly stir fry stem part of Chinese broccoli, onion, and garlic with just a little bit of cooking oil. Then, remove from the wok.

(4) Stir fry meat. Remove from the wok.

(5) Heat 1 tablespoon of cooking oil. Then, add half of rice and stir fry for 30 sec. Then, add the rest of rice and cooked eggs from (2), and stir for a minute or until it is mixed well.

(6) Toss stir fried veggies from (3), and cooked meat from (4).

(7) Also, add soy sauce, oyster sauce, sugar, and black pepper. Stir it for 30 sec or until it is mixed well.

(8) Finally, toss leaf part of Chinese broccoli and green onion (and tomato - optional). Stir it for another 30 seconds to mix well.

(9) Serve with lime and sliced cucumbers!
