Boiled Turnip. Take mashed turnip, or turnip rubbed with a piece of iron, and let it dry out. Soak if for three days, with three changes of water. Then cook it, adding honey and spices.
Turnips Baked in Cream and Egg Sauce (p. 196, Best of Russian Cooking)
4 c sliced cooked turnips
1 c bread crumbs
2 tbsp butter
¾ c sweet cream
1 ea egg, whole
salt
pepper
Preheat oven to 350F.
Cook the turnips in salt water until soft but not overcooked. Slice them in thin pieces about ½ inch wide and 3 inches long. Mix the turnip slices with the bread crumbs and the butter cut in small pieces, and place them in a fireproof dish. Mix the cream and the egg together, add salt and pepper to taste, and pour over the turnips. Bake until lightly browned on top, about 25 minutes.
