We base our prices on the hanging weight of the beef(Also called on the rail). Our Price is $5.50 per lb plus the cost of the butcher. Currently the butcher we use is $1.25 per pound to process plus a $100 Kill fee. So in total you pay $6.75 per lb plus your portion of the kill fee.
As an example, if the steer has a live weight of 1000 lbs, then the hanging weight should be around 610 lbs. You lose a little weight from bones and trimmings making the cuts. The actual amount of beef you would receive is about 430 lbs. So the cost would be the 610x$6.50= $4,117. Then add the kill fee of $100 and the total is $4,217. That means your total cost per pound of finished product is around $9.80 for all cuts averaged. That's cheaper than the grocery store!
If you choose a different size, like a quarter beef, then you take the total cost of $4,217 and divide it by 4. So that would equal $1,054.25
Our beef usually ends up between 850-1,100 Live weight. So that gives a final range of
Whole Beef - $3,610-$4,629
Half Beef - $1,805-$2,314.50
Quarter Beef - $902.50-$1,157.25
