Combi Oven Cleaning Schedule
Routine cleaning is an important part of the maintenance of all combi ovens. It is also one of the requirements for RATIONAL to honor the 2-year warranty for new units.
Oven should be cleaned at least 2 times a week, but no less. Cleaning should be completed on Tuesdays before starting the next day's overnight cooking and Fridays before turning off.
Always monitor the “ Cleanliness Status” and “Maintenance Status” indicators (bars in SCC models, circles in iCombi Pro models) to monitor how well your unit is being maintained. Indicators will go from green to yellow to red on the SCC models depending on how well the units are being maintained. If the “Maintenance Indicator” stays on yellow or red and does not move to the green with regular cleaning cycles. A “Rinse without tabs” cycle should be performed in between regular cleanings. If this doesn't solve the issue, please as your Supervisor to place a work order.
All our units should be using the green and blue tabs only. Tabs have an expiration date, but can continue to use, unless you find detergent debris inside the oven cabinet after a cleaning cycle has been completed. If these happens, send tabs to the warehouse to be discarded properly and reorder new tabs. Do not discard tabs in the dumpster.
Do not use any cleaning chemicals other than the green and blue tabs to clean the units. Doing so may cause damage to the unit’s mechanical components and stainless-steel parts.
