You can use:

Newton's Second Law (m = F/a) to calculate an unknown mass (m) against measures of applied Force and acceleration; (The ISS's MMD uses this technique) OR 

Newton's Third Law (Conservation of Momentum  mv = MV) to calculate an unknown mass (m) against a known mass (M) and measures of their respective reactive velocities V and v.
