Provides an overview of the impact of nutrition on aging and the impact of aging on nutrient needs. Examines food access, procurement, preparation, and enjoyment using a socio-ecological framework of health and wellness. Evaluates age-associated psycho-social, economic, and environmental influences on individual food security and institutional program delivery. Emphasizes nutrition and food for healthy aging.
This course is arranged chronologically over 10 weeks and employs a unit design. Each week, students should complete all activities listed in that week's unit. The course examines two core content areas - Aging and Nutrition & Wellness - and culminates in a "Big Idea" Synthesis and Action Project:
There are ten discussions in this course. The first nine are worth 10 points. The final discussion (Show & Tell Exhibit) is worth 25 points.
