FN225 Nutrition Overview
This is a fully online course. There are no required weekly Zoom sessions.
I have (optional) virtual office hours, and am always available to schedule individual Zoom or phone meetings with students.
Prerequisites:
IRW 115 (or WR 115 and RD 115)
(MTH 65 or MTH 98) or equivalent placement
BI 112 or cellular biology equivalent

Here is a little information about myself! My name is Cindy Francois, MS, RD/RDN, LD. What do these letters mean?!
MS degree in Nutrition from Oregon State
BS degree in Food Science and Nutrition from Central Washington University
Dietetic Internship at OHSU
Licensed to practice in the state of Oregon
How Did I Become Interested in Nutrition?
I grew up eating a very "typical American diet" and struggled with weight in my youth. However, when I took my first elective nutrition course in college, I became so inspired to learn as much as I could about nutrition and to become a healthier version of myself. I changed my major immediately and haven't looked back!
While I have a passion for healthy eating and fitness, I also enjoy many foods in moderation!
What Else?
Like most of us, I wear many hats in life!
Married to my husband Adam since 1996
Mother to grown sons
A dog mama to Vina (German Shorthaired Pointer) and Janie (mini longhaired dachsund)
A candle-maker (my hobby/side hustle is making scented candles which I sell in local wineries and gift shops)
A retired business owner - my husband I recently sold our dental practice which we owned for 29 years! Phew!
A cook - I love trying new recipes!
An avid reader - I belong to two book clubs

What to Expect This Term
Weekly content available Monday mornings at 12:01am
Due dates are typically Sunday at 11:59pm (with the exception of week 1 and finals week)
Assessments include quizzes, discussion and various assignments
Late Work Policy - I believe deadlines are important!! Especially in health professions!!
No extensions allowed on quizzes, tests and discussions (unless you can provide documentation of illness, medical or family emergency)
Assignments can be submitted up to one week after due date with a 20% penalty
Frequently Asked Questions
Q: Do I need a textbook for this course?
A: No. This is an OER course (Open Education Resource) - so all of the content will be embedded within the D2L course!
Students are required to purchase the eshaTRAK dietary analysis access code for $15 through the PCC Online Bookstore (if using financial aid OR directly from esha.com. Note: purchasing from esha.com directly gives you an option to rent access for 4 months at cost of $15). You will need the access for at least one month (during Units 4 and 5). This does not need to be purchased until after the first month of instruction and you will receive instructions on how to purchase this a few weeks into the course.
Q: Do we meet face-to-face?
A: No. Everything will be done online, in the comfort of your own home (or wherever you access the internet).
I post mini videos weekly so you can "put a face to a name", answer frequently asked questions, and to remind you of upcoming due dates.

Q: I'm not a good test taker!! I'm so nervous about this course!
A: Relax - there are plenty of ways to earn points in class. There are quizzes, assignments, discussions, and even an extra credit assignment.

A: You can call me any of these things, but honestly just calling me Cindy as perfectly fine with me!
