Culinary Arts Pathway Description

The Culinary Arts Pathway introduces students to elements of food preparation.

The Culinary Arts Pathway will focus on the skills of safe food handling, basic food preparation and service, culinary science and math, fruit and vegetable carving, planning, preparing and presenting a wide variety of foods.

Students will come out of this pathway ready for a career in the Culinary Arts.

Courses in the Culinary Arts Pathway

Culinary Arts (01)

This course explores careers in the Culinary Field. This includes practical experiences in the areas of Food Preparation, Safe Skills Food Handling, Service, Culinary Science and Math, Planning and Presenting Foods.

Baking Essentials / Specialty Foods (02)

This course goes into the art and science of baking. Baking is a science. Why does bread rise? How does the amount of sugar effect the shape of your cookies? This class will take a deep dive into the science of baking.

Events Catering (03)

Students enrolled in this course will learn how to properly and efficiently plan, prepare and cater events. You will prepare the food, set up the venue and of course, clean up. This course will set you up with the necessary skills to pursue a career in the culinary field after high school.

Professional Internship (03)

Allows students to apply academic knowledge and demonstrate technical 21st-century skills in a workplace setting. Students will prepare job readiness documents and will interview at an assigned site before interning with a local El Modena Business Partner.

About El Modena's Culinary Arts Teacher

Mr. Jim DeLeo

Mr. DeLeo is a graduate of The Culinary Institute of America. He trained in Denmark for 1½ years as a cook’s apprentice. He has worked in all major areas of the food service industry from being a Sous Chef at Hilton Hotels, Chef Tournant at Scandia in West Hollywood. He was the Executive Chef at the Old Ranch Country Club and the roaming Manager for Total Food Management Foodservice Contractor. He has worked in an institutional foodservice environment where they prepared 75,000 meals daily and also for the Defense Science Board where he had the privilege of serving NATO. It has always been in his rainbows end to teach when he reaches the end of my career which I am able to do here at ELMO
