There are so many different ways you can make this easy, delicious sandwich--so feel free to play around and try new combinations! I also like to pair this sandwich which a hearty soup for a cozy, filling dinner!
Ingredients:
Whole wheat bread (2 slices/sandwich)
1 zucchini, finely chopped
1/2 onion, finely chopped
3/4 cup shredded carrots
Sliced cheese of choice (I used pepper jack and cheddar)
Pepperoni slices (or another choice of meat)
Greek seasoning, 2 tsp
Instructions:
Chop zucchini and onion. Pour a dab of oil in a pan and turn the stove to medium heat. Add vegetables and Greek seasoning. Sauté, stirring frequently, for 5-8 minutes.
Build your sandwich using all ingredients and put into a panini maker, toaster oven, or cook on the stove in a skillet until golden brown.
*You can also add pesto, tomatoes, or another bold flavor of choice!
Dump all the ingredients into a crockpot before you leave for work, and come back to a delicious, ready to eat meal!
Ingredients:
2 cups shredded rotisserie chicken
1 cup quinoa
1 can (15-ounces) black beans, rinsed and drained
1 can (15-1/4 ounces) sweet corn, rinsed and drained
2 cups salsa, use your favorite brand
2 cups low-sodium chicken broth , divided
8- ounces shredded Mexican Blend Cheese
1 can (4-ounces) diced green chiles, not drained
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
Instructions:
Pour all ingredients into a crockpot, mix together, and cook on low for 6-8 hours or on high for 4 hours.
Ingredients
5 ounces wheat linguini noodles
1 cup bagged broccoli slaw mix
1/2 cup shredded carrots
1/3 cup chopped cilantro
1/4 cup chopped green onions
1/3 to 1/2 cup chopped unsalted peanuts
2 cups shredded rotisserie chicken (optional)
Sauce:
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons sesame oil
4 cloves minced garlic
½ to 1 teaspoon red pepper flakes
Instructions:
Cook linguini noodles according to package instructions. Drain when done cooking.
While noodles are cooking whisk together in a small bowl the soy sauce, honey, sesame oil, garlic and red pepper flakes.
Pour sauce onto drained noodles and toss together. Add broccoli slaw, shredded carrots and shredded cilantro to noodle mixture and mix. Then gently stir in half of chopped cilantro, green onions and peanuts, reserving the other half for garnish. (Add the shredded rotisserie now, if using.)
Serve warm or cold and garnish with remaining cilantro, green onions and chopped peanuts.

Mix and match your favorite vegetables and use cauliflower rice, brown rice, or a combination like I do!
Ingredients:
Andouille Sausage (I use turkey sausage)
Peppers*
Onion*
Asparagus*
1 bag frozen cauliflower rice
Cajun seasoning
Instructions:
Wash and chop vegetables if fresh. Clean the knife and cutting board, and cut the sausage into coined slices.
Use a cooking oil or spray on a large skillet and turn stove to medium heat.
Cook vegetables for 5 minutes, stirring frequently.
Toss in sausage and cook for 5 minutes. While cooking, follow the directions on the rice packets to cook rice.
Pour in the first bag of rice and season well with cajun seasoning. Stir.
Pour in the second bag of rice and season well again. Stir well and cook for an additional 2-4 minutes all together
*All vegetables can be frozen or fresh!

Peanut Sauce (use this recipe, or buy pre-made)
Radishes
Carrots
OR
Broccoli Slaw
Shredded Cabbage
Chopped nuts (optional)
Instructions:
Preheat oven to temperature noted on pizza crust.
Spread peanuts sauce thoroughly.
Slice carrots and radishes into coins and layer in pattern of choice on pizza OR pour broccoli slaw and cabbage onto pizza.
Bake according to time noted on pizza crust, or until the sauce turns a golden brown.
