Authentic Old Delhi cuisine, while culturally rich, is traditionally prepared with excessive fats, high sodium, and heavy oils, making it unhealthy for regular consumption and unsuitable for travellers who require light yet nourishing meals. Furthermore, "authentic" flavours are often priced at a premium, making them inaccessible to the average passenger at transit hubs like the New Delhi Railway Station (NDLS). Travellers, both domestic and international, are currently forced to choose between unhealthy, calorie-dense local food or expensive, standardized Western alternatives.
Desi Diet LLP, through its brand Namami Kitchen, has developed a proprietary "Balanced-Desi" cooking framework. We use modern culinary techniques—such as moisture-retention cooking and cold-pressed oil infusions—to reduce the caloric density of traditional Old Delhi dishes by 30–40% without compromising the authentic flavor profile.
About our Chef:
Chef Soni belongs to a family that has lived in Old Delhi for 100s of years.
Raised in the lanes where Mughlai cuisine was born, she learned cooking not from books, but from generations of experience.
Although she worked in the corporate world for more than 7 years, her childhood dream was always to cook and serve authentic Old Delhi food.
Leaving her corporate career, she founded Namami Kitchen to revive the true Mughlai taste that is slowly disappearing.
Today, every dish at Namami Kitchen carries the soul of Old Delhi.
