Scientific Name: Allium fistulosum
Classification: Scallions belong to the division angiosperms, class Liliopsida, order Asparagale, family Amaryllidaceae, genus Allium and species fistulosum. The Allium genus includes other common vegetables such as Garlic, Onions, Shallots and Leeks and are characterized by bulbous root systems. The second part of Allium fistulosum's scientifc name is important to distinguish it from these other common species in its genus (Allium).
Varieties: Various varieties are grown such as Crystal Wax, Ebenezer, Eclipse, Hishiko, Ishikura, Kincho, Sweet Spanish, Tokyo Long, White Globe, and White Portugal, however the most common is White Lisbon.
Information: Scallions are not native to Missouri or the US, they are instead from China. Despite this, they have been domesticated and are grown across the world (this makes them domesticated). China, however, does grow the most green onions out of any other country. They are used by various cultures across the world, but are most significant in East and Southeast Asian Cuisine. They are notable for their nutrition, as they contain key micronutrients such as Vitamin A and B.
My Connection:
Green onions have always played an important role in the food we eat in my household. A sauce used in many Vietnamese dishes is "Mỡ Hành" (direct translation greasy onion), and is made with green onions, sugar, and oil. Growing up, my brother and I would often be tasked with cutting the green onions for the sauce, and would have to avoid "accordions", or pieces of attached green onions, when cutting. Additionally, more recently my mom has started growing her own green onions on our farm, and interestingly these ones have had a stronger onion flavor. That's why in the picture to the right my goofy brother (off his meds) is wearing googles to cut them.
