Chef Lauren Pulgarin is a graduate of the Culinary Institute of America in Hyde Park, NY. She graduated with a Bachelor's of Professional Studies in Baking and Pastry Arts Management. Upon graduation, she was a Teaching Assistant in the Apple Pie Bakery Cafe on CIA's campus. She began her career at Confetti Cakes in Manhattan and had the opportunity to participate in a Food Network Cake Challenge. She attributes her strength in wedding and special occasion cakes to the time she spent at Confetti Cakes. She then worked her way up the pastry ladder in restaurants to eventually become a pastry chef of her own department. She has opened the pastry department in several restaurants and has overseen multiple restaurants, with her last Pastry Chef position being held at Chef Michael White's Due Mari, Osteria Morini and Nicoletta.
