I make the tomato sauce with tomatoes, garlic and herbs from the Terrell House garden, as well as tomatoes, onions, and peppers from the farmers market.
I make the pizza dough with a sourdough starter and flour that I buy in bulk at the Natural Living Center. I also get a Portland Pie Gluten Free Dough from Hannaford to provide an option to those with gluten intolerance. I get organic cheese from the NLC or the farmers market. I use produce from the Terrell House garden or the farmers market.
By making and sharing healthy food with mostly local ingredients, I am exemplifying how Permaculture Ethics and Principles can be used to guide the conscious design of events and projects.
Earth Care: Supporting local, small-scale agriculture supports sustainable practices and shortens the food supply chain. This eliminates energy use and GHG emissions from processing, packaging, and transportation of food.
People Care: I am providing fresh, healthy food to the participants, and supporting local farmers and businesses at the same time.
Fair Share: I wanted to share the abundance of the sourdough starter, which was gifted to me from a friend I met at my Permaculture Design Course this past summer. Thanks to the Charlie Slavin Research Fund I am able to provide free, fresh food to discussion group participants.
Design From Patterns to Details: By being intentional about how my values fit into every piece of this project, even down to the food I am providing, I am designing the project as a whole rather than approaching each piece separately.
Catch & Store Energy: Quite literally, the energy of the sun has been captured by the plants in the Terrell House garden, and farmers' fields. We then harvested that good energy and stored it in our bodies as food.
Obtain a Yield: We are obtaining yields of food, health, and community.
Use Small & Slow Solutions: By taking the extra time to make the pizza from scratch, as opposed to buying ready-to-go snacks, I can slow down before the discussion group and prepare my minds along with the pizza.
