1) In a large bowl, mix together the milk, egg yolks and vanilla. Stir in the flour, sugar, salt and melted butter until well blended.
2) Heat a crepe pan over medium heat until hot. Coat with vegetable oil or cooking spray. Pour about 1/4 cup of batter into the pan and tip to spread the batter to the edges. When bubbles form on the top and the edges are dry, flip over and cook until lightly browned on the other side and edges are golden. Repeat with remaining batter.
3) Fill crepes with your favorite fruit, cream, caramel or even ice cream to serve. This batter will also serve about 12 servings per crepe.

1) Heat oven to 375°F. In a medium bowl, whisk together flour, baking soda, cream of tartar, and salt.
2) With an electric mixer, beat the butter, brown sugar, and 1 cup of the granulated sugar on medium-high speed until light and fluffy. Beat in the eggs and vanilla. Reduce speed to low and gradually add the flour mixture, mixing just until incorporated.
3) In a different shallow bowl, combine the cinnamon and the remaining 0.25 cup of granulated sugar. Form the dough into small balls. Roll the balls in the cinnamon sugar mixture and place on parchment-lined baking sheets, spacing them 2 inches apart.
4) Bake until the edges are golden, 12 to 14 minutes. Cool slightly on the baking sheets, then transfer to wire racks to cool completely.
Tip: Freeze extras in parchment paper in a metal tin and take out a few cookies each week for treats in their snack or lunch. This batter will also serve +12 cookies which depends on size.
