In our class, haumāna learn skills in cooking techniques, healthy meal building and food safety. We use basic principles of science to help us better understand our food, how it acts/reacts and where it comes from.
Our kitchen pairs up with classroom teachers to incorporate the culinary arts into their curriculum. We also focus on using ingredients that are grown on campus by students or by local farmers on Hawaiʻi Island. We believe that by cooking with the ingredients we have builds a stronger sense of place and community.
Locally-sourced food is always in season and ready for our creativity. Come experiment with us in our culinary lab!
Kumu DJ
After spending a few years as a science teacher at Kamehameha Schools Hawaiʻi, Kumu DJ followed his nose and stomach into the kitchen! By learning basic culinary skills at home as a kid and expanding on those in college as a cook and caterer, he is ready to push the envelope a bit more! Always looking for new inspiration from students, cooks, teachers and farmers Kumu DJ is trying to help all (including himself) understand what happens in our kitchens and our bodies when we cook or eat.
If you are a chef, farmer, home cook, food scientist, nutritionist, or anyone else who feels like you can help make our classes/program more successful, please feel free to reach out. Weʻd love to hear from you!
