Bread with spleen
To make a bread whit spleen we nead: bread, spleen, lemon, caciocavallo(chees), lard, salt and pepper.
To prepare bread whit spleaen, start by bringing 2 liters of salted water to the boil, add the spleen and boil it for 3-4 minutes. Drain them, let them coolcool and then cut it into thin strips.
Melt the lard in a alge pan and fry the spleen in it.
Drain them, arrange them to dry on kitchen paper, add salt and pepper. Grate the caciocavallo, cut the bread in half and fill with the spleeen. Season with lemon juice, complete with chees and close the sandwich.
