Pop-Up Lunch and Industry Engagement
This phase culminates in the “Res es perd” pop-up lunch—meaning “Nothing Goes to Waste”—which serves as the project’s final living outcome. The lunch is inspired by the Planetary Health Diet and features local dishes prepared using surplus ingredients provided by suppliers.
The event brings together hospitality professionals, educators, and representatives from the gastronomy sector, creating a unique platform for collaboration between Vocational Education and Training programs and the wider hospitality industry.
In this event, students design the menu and prepare the dishes, making their culinary creations the tangible outcome of all the knowledge and skills developed throughout the project. These final elaborations are shared directly with industry professionals, providing an authentic setting to showcase their learning.
This phase highlights the potential of collective action: when all stakeholders work together, food surplus can be transformed into value, demonstrating in practice that nothing goes to waste and reinforcing the importance of sustainability across the entire food system.
