Bigilla is a traditional Maltese appetizer made with beans. Its main ingredient is a special type of large bean know in Malta as ful tal-Girba. In some towns in the country, the bigilla is sold by street vendors one day a week. There are several traditional recipes for the dish

The quantities are:
● half a kilo of beans.
● 100 g of olive oil
● 1 lemon
● 1 chilli
● 8 cloves of garlic
● salt
● pepper
● aromatic herbs, to taste.
Soak the beans for 24 hours, changing the
water at least 3 times.
Cook the beans for two hours in salted
water.
Once the beans are tender, adding the
rest of the ingredients, the oil, a little
chilli, lemon, garlic, and aromatic herbs,
beat them with a blender until obtaining a
paté. Season to taste. The pâté can be
served hot or cold to spread with tomato
puree.
