Next time you grab a mass produced pig ear, take a quick look at it... Was it hand cleaned and sorted? We take a quick rinse to get any of the extra off with a mild ACV dip then sort them. Our ears' pre-roasted weight is 2.5-3.5 ounces. The smaller ears are made into strips and bits. The larger ones 3.5-4.5 are kept for our "Gourmutt Ears." These are sourced from a USDA inspected facility right here in Northern Indiana - How’s that for knowing where how and why we do what we do? Oh and ZERO smoke or smoke flavor. Why? Because it has mixed reviews of whether or not smoke flavor is or isn’t a carcinogen. So why risk it?
