Dish: Encebollado
Food Demonstration View Party with Soroya Kukulies @cocinadoalestidosoraya
Enjoy a viewing party demonstration of how to make Encebollado, a traditional Ecuadorian fish soup that showcases some of the rich flavors found in Ecuadorian cooking.

Encebollado Ingredients
3 pounds of tuna
Cilantro
4 pieces of green onions
2 sticks of celery
2 pounds of yuca
2 red pepper
1 green pepper
2 medium red onions
4 tomatoes
6 cloves of garlic
Salt to taste
Ground black pepper to taste
4 TBS chili powder
2 TBS of ground cumin
1 TBS of paprika
Procedures
I cook all the vegetables in boiling water for 30 minutes, and then in the same pot put the fish to cook for 15 minutes
Also with the condiments, chili powder, cumin, paprika, salt and the ground pepper
In another pot with water, I cook the yuca for 20 minutes or until the yuca is soft
Then remove the vegetables and blend them with part of the broth with 3 medium pieces of yucca
The mixture that we have blended we pass through a strainer and in a pot and let this mixture cook for 8 more minutes and check the salt and chili powder
We cut the fish and cassava into smaller pieces, when serving we put the soup with pieces of cassava and fish and at the end the red onion and lemon salad and serve

Dish: Ecuadorian Ceviche
Shopping List and Preparation to cook along with Jamal
1 - 1.5 pounds fresh white fish fillets (any white fish will do; I use opah)
1 - 3 hot peppers (eg. Thai chiles or similar)
4 garlic cloves
1 - 2 red onions
4 tomatoes (Roma tomatoes work well)
1 bell pepper (any color)
2 jalapenos
15 - 20 limes
1 bunch cilantro
3 tbsp oil (avocado oil works well)
Salt
Pepper (optional)
Cayenne (optional)
Cumin (optional)
On the side:
Plantain chips
Popcorn
Don't forget to take a picture of your completed dish and post it to our Community Board

Wrapping paper roll
Glue
Scissors
Colorful paper or markers
Beads, coins, dried beans, or other noise-making small objects
Aluminum foil
Used tissue paper for decoupage
Don't forget to take a picture of your RAIN STICK and post it to our Community Board
