Chinese Steamed Eggs
Ingredients:
5 Eggs
Two Cups of stock or water
Chopped green onions
Sauce:
2 Tbsp of Soy Sauce
1 Tbsp of Sesame Oil
1.5 Tbsp of Oyster Sauce
1/2 Tbsp of Sugar
Directions:
Prepare the steam by adding water on the bottom part and put it on medium-high
Crack five eggs into a bowl, add stock and mix well
Strain egg mixture into an another bowl (this is stove safe), and place it in the top portion of the steamer
Once the water is simmering, you can add the top portion of the steamer to the bottom one
Prepare the steamer by adding water just to the bottom portion of the steamer, and put it on heat for medium-high
In a bowl, crack five eggs into it, and stock and mix well
In a separate bowl (stove safe), strain the egg mixture and remove any bubbles on top
Once the water is simmering, you can add the bowl with the egg mixture to the top portion of the steamer and cover it wit ha lid, but use chopsticks to leave an opening
Let the egg steam for 20 minutes. To know if it's done, you can use the back of a spoon to lightly tap the surface of the eggs. If it doesn't sink, then it's done!
In another bowl, add soy sauce, sesame oil, oyster sauce, and the sugar, mix well
Add the sauce on top of the cooked eggs, and garnish with chopped green onions.
