COT is establishing to explore the knowledge in the niche area through basic and advanced research whilst driving the transfer of technology with the industry to increase the capacity of the institution in the producing competitive graduates to meet the needs of the country's human capital. In achieving the vision to become the leading TVET institution; focused collaboration, research, innovation and shared expertise in the core of COT are constantly developing into a hub of primary knowledge for the institution and related industry.
Starting with the establishment in 1976 of the Department of Food Technology (JTM), Politeknik Sultan Haji Ahmad Shah, JTM has now taken the steps to lead the glories of science in today's era of globalization. JTM strives to promote excellence in the niche area through collaboration, research, innovation and shared expertise with the recognition of the Centre of Food Science and Technology (CFoST) on 8 September 2015
