Food Processing and its various methods
Food processing includes the basic preparation of foods, the alteration of a food product into another form (as in making preserves from fruit), and preservation and packaging techniques. There are various methods of food processing. Drying is the oldest method to process or preserve food. It reduces water content in the product which in return reduces bacterial and fungal growth. It is used to process cereal grains. Pasteurization includes heating and cooling in order to destroy microorganisms. Milk can be processed through this method. Smoking is the method to process food items like meat, fish etc. Freezing can also be used to process food on commercial as well as domestic basis. Salting sucks out moisture from food and is therefore used as food processing method. Meat is preserved through salting.

Objectives
The transformation of agricultural products into food, or of one form of food into another is called food processing. It is necessary to make food edible.
Some of the objectives of food processing are:
1. It reduces the number of harmful bacteria in food that cause diseases.
2. It boosts the shelf life of food products.
3. It helps prevent food contamination.
4. It provides employment to a large population in a country.
5. It makes food more attractive at the market.
6. It improves the texture and the consistency of food.
All these objectives help increase the availability of food and reduce its chances of getting affected by microorganisms.

Benefits of Food Processing
1. Preservation: When you process foods, you often make them far easier to store and preserve. Some food processing techniques, such as freezing, preserves the food’s nutritional content. Other methods, like cooking, can also improve nutritional content. Also, preserved food is available for much longer time periods than non-preserved foods, thus making them easier to keep and store without the consumer having to make more frequent purchases.
2. Safety: Another key benefit to processing foods is the ability for producers to ensure food safety and remove or prevent dangerous toxins. For instance, Milk pasteurization, removes harmful bacteria from raw milk, making it suitable for human consumption. Food processing methods that remove water, like drying and smoking, reduce or limit the possibility of bacterial growth since the bacteria rely on the water to grow and multiply.
3. Increasing availability and convenience: Food processing allows us to eat a greater variety of foods than our ancestors. Since we can safely preserve and package foods, we are able to transport foods from across the globe to our homes. We are neither restricted to what is produced locally nor to seasonality so it greatly extends food availability and accessibility for the great majority that live in urban environments.
4. Personalized nutrition and health: We are increasingly aware of how the foods we eat impact our health, and that our individual nutritional needs may differ from those of others. Modern food processing has made it possible to tailor foods according to our specific needs and give us more control over our own health.
5. Preserving nutritional quality: Modern preservation methods maintain not only the quality of food, but also its nutritional properties. Some vitamins easily lose their nutritional value during storage, particularly due to oxidation. Preservation and packaging techniques stabilize these important nutrients. We can also use safe food additives in order to prevent oxidation.

Drawbacks
Since the advent of food technology, we have adopted methods to produce, preserve and develop products. However, it has also paved the way for excess processing and altering of food. This includes the addition of chemical preservatives, artificial colours, flavours, texturing agents and sometimes even banned substances that can be found in the ingredient list.
Even though most foods available to us are processed, mechanical processing like grinding, heating and pasteurisation does not necessarily render them unhealthy. In reality, ultra-processed foods like baked goods, frozen or instant meals, chips and sweetened drinks are the culprit. These are particularly high in calories due to massive amounts of sugar, refined carbohydrates and fats. Further, they contain insufficient dietary fibre and other essential nutrients. Frequent intake has the potential of inciting anger and irritability. As the list goes on and on, such foods are linked to serious health disorders like diabetes, heart diseases and obesity.
It is easy to fall prey to convenience eats with our hectic lifestyles and their still-growing popularity. Therefore, to remain healthy and happy, we should consume nutrient-rich items like vegetables, legumes, pulses, fruits, beans and whole grains.
