The DVC Pleasant Hill Culinary Arts program is thrilled to announce its annual Alere Food & Wine symposium, a vibrant celebration of culinary diversity, innovation, and education. This event will serve as a platform for fostering connections between students, industry professionals, and the local community, all while raising funds to support international student learning experiences.
This year’s event will feature a dynamic lineup of food science and culinary workshops, interactive cooking sessions, and engaging discussions on the future of food. Attendees can look forward to:
Origins & Ownership: Building Burdell – A case study in heritage-driven brand building and translating cultural roots into modern restaurant identity.
Beneath the Vines: The Science of Terroir – Exploring Napa Valley’s geological foundations and how soil shapes wine structure and flavor.
Oysters & the Ocean: Marine Ecology in Every Bite – A deep dive into oyster sustainability, marine biology, and salinity-driven flavor development.

The Comeback of Merlot: Art, Perception & Revival – Examining media influence, cultural reputation, and the resurgence of one of Napa’s most misunderstood varietals.
Migrant Cuisine: From Paella to Jambalaya – Tracing the evolution of American cuisine through migration, adaptation, and cultural exchange.
Blood on Chocolate: Ethics Behind the Sweetness – Investigating chocolate’s journey from sacred ritual to luxury commodity — and the hidden labor systems behind it.
Land & Movement: An Interdisciplinary Roundtable – A moderated synthesis conversation connecting land, culture, migration, and culinary identity.
Proceeds from the festival will help fund international student camps in culinary-rich destinations such as Italy, Spain, Australia, and St. Lucia. These immersive experiences offer students an invaluable opportunity to explore global cuisines, develop technical skills, and broaden their culinary perspectives beyond Eurocentric traditions.
