The roots of Morioka Jya-jya noodle is “Zha Jiang Mian”(炸醤麺), which is one of the Chinese traditional dishes. Morioka Jya-jya noodle was created about 60 years ago, by the chef of “Pairon”(白龍). After the war, the first owner of Pairon, Takashina Kansho, who was from Tairen, China, arranged the flavor of “Zha Jiang Mian”. Based on what he had eaten “Zha Jiang Mian” in Manshu before the war, he adjusted the flavor to suit local tastes in Morioka.
Top udon noodles with savory stir-fried meat miso, then add garlic, ginger, chili oil, and vinegar to taste. Mix in chopped cucumber and green onions before serving. After eating, a characteristic variation is to add boiled broth and the meat miso to a beaten raw egg to make an egg soup called “chitan-tan.”
◇A dish where you can cultivate the flavor by yourself
Morioka Jya-jya noodle is eaten by adjusting the meat miso, vinegar, chili oil, and garlic. Therefore, even the dish is provided by same restaurant, the tastes are completely different depending on the person.
◇One of Morioka's Three Great Noodles
Alongside Wanko Soba and Morioka Reimen, it's one of the “Morioka Three Great Noodles.” It's also popular with tourists from outside the prefecture.
◇The Texture of the Noodles is Key
Characterized by flat, chewy noodles similar to udon, a traditional Japanese noodle, where the noodles cling well to the meat and miso.
◇The Culture of “Chitan-tan”
A unique finishing style found rarely elsewhere in Japan. People crack an egg into the empty bowl and add the cooking broth to drink. It reflects the Tohoku spirit of not wasting food.

When I visited Morioka for sightseeing, I enjoyed eating this noodle because I heard that Jya-Jya noodle is one of the third famous noodles in Morioka.
Before eating them, I just thought that it was just one of the Ramen, but surprisingly, the flavor and texture of the noodles were very unique and special. It was really tastier than I expected, and I would love to try them again when I visit Morioka again!!!!
