"When the cold night has come,
stand by Damako-nabe."
-Hazuki Kajiyama
In the past, in the region in Akita, called Minami Akita-gun, Japanese smelt (wakasagi), crucian carp (funa), and whitebait (sirauo) were eaten, because this area was a port town and full of edible fish. However, it was reclaimed, and the amount of fish dramatically decreased. After that, instead of fish, chicken and chicken stock have been used. In addition, rice and vegetables native to Akita are put into the chicken, which became the current Damako-nabe.
<The origin of the name>
There is a theory that the origin is from the fact that the rice used in Damako-nabe was similar to otedama. Generally, we Japanese call the childish toy for playing with others by throwing otedama, but in Akita, it is called Damako because of its dialect. Or, there is another theory. Children who ate Damako-nebe never utter anything because of its good taste. Because these silent children are called damakko in Japanese, we call the dish Damako-nebe.
This is one of the Japanese local cuisines which are mixed with meats and vegetables in soup. Damako-nebe is composed of chicken stock and chicken meat, rice balls, and fresh vegetables such as green onion, burdock, and maitake mushroom. The recipe depends on individuals, but these ingredients are common among Akita. The main ingredient is rice, which is shaped into a ball. While boiled, it is not good for it to collapse, so before boiling it, rice should be rolled up strongly by hand to the size of a ping-pong ball. On the other hand, not only are ingredients important, but the soup is essential. Its soup is made of chicken stock, so we can enjoy the taste of the harmony of chicken and vegetables.

How to cook Damako-nabe and history of Damako-nabe
(It is in Japanese, but English subtitle is available. )
Even though I am not from Akita, it tastes nostalgic, and I feel safe and warm when I eat Damako-nabe. In terms of taste, I cannot say anything bad, and it is very easy for me to cook this cuisine, so damako-nabe can save a lot of cost. Damako-nabe is not only yummy and warm, but also full of nutrition. These days, I eat unbalanced food in every meal, so I want to cook this when I feel my diet lacks nutrition. Overall, damako-nabe should not be the cuisine unique to Tohoku, Akita. This is very nutritious and reasonable, so it should prevail among many Japanese all over the prefecture.
