12/12 Peppermint Creams

Ingredients

  • 450g (1lb) icing sugar

  • 11/2 egg whites

  • a few drops of peppermint essence

  • food coloring

Directions

  • Sift the icing sugar into a bowl

  • Whisk the egg whites until frothy then add to the icing sugar adding a few drops of the peppermint essence as you go

  • Mix to a very thick paste, kneading with your hands if necessary (this is where you can add the food coloring if you want)

  • Roll the paste into flat disks and place on a wire baking rack to dry
