450g (1lb) icing sugar
11/2 egg whites
a few drops of peppermint essence
food coloring

Sift the icing sugar into a bowl
Whisk the egg whites until frothy then add to the icing sugar adding a few drops of the peppermint essence as you go
Mix to a very thick paste, kneading with your hands if necessary (this is where you can add the food coloring if you want)
Roll the paste into flat disks and place on a wire baking rack to dry
