GHCDS second graders explored St. Croix’s ecosystem on a field trip to Southgate Coastal Reserve with SEA’s Ms. Olivia Walton, observing indigenous plants and comparing soil and dirt through ecosystem samples.
Back in the classroom, they continued their "Soil to Soul" journey by making bush tea, gathering lemongrass, rosemary, bay leaves, basil, soursop, and cattle tongue. As the tea steeped, they carved calabash cups, studied their herbs, and documented their findings. After adding a touch of sweetener, they tasted the tea and reflected on how it made them feel, warm, healthy, sleepy, fiery, happy, and relaxed.
This hands-on experience deepened their understanding of soil’s role in life and well-being.
