Prof.Dr.Gary Henehan

Professor and Head of the School of Food Science & Environmental Health at the Technological University Dublin (formerly Dublin Institute of Technology). Professor Henehan is a Biochemical Pharmacologist by training and has spent several years in industrial research and development in the Food, Pharmaceutical and Biotechnology sectors. He has a broad range of research interests in the Food, Pharmaceutical and Environmental sectors including the application of nutraceutical ingredients in foods as antimicrobials and as anti-cancer agents. He is also interested in the enzymology of carbonyl metabolism and its role in disease. His most recent research interests are in bioprospecting for novel, solvent and thermostable enzymes for chemoenzymatic synthesis of novel compounds. In research relating to the environment, he is currently exploring the use of plastics degradation monomers as building blocks for novel compounds. Prof. Henehan has an H-index of 25 and has published over 60 papers in the Food, Pharmaceutical and environmental areas.
