SEASONAL FEATURES
Dairy includes a wide variety of products that are made from milk - including cheese, yogurt, butter, and milk itself. Dairy products, usually come from cows, but can also come from other mammals like goats. No matter where it comes from, dairy products are high in calcium and help build strong bones.
Beef, which is the meat that comes from cows, is a fantastic source of essential nutrients like iron, protein, vitamin B12, and zinc. In the US, Minnesota ranks 10th in cattle production and is home to more than 16,000 beef farmers and ranchers.
There are many different types of leafy greens, some of the most popular being kale, spinach, collards, and romaine lettuce. Several types of greens, like kale and collards, can continue to grow well after the first frost. This makes them a great produce option in early winter.
Tangy balsamic vinegar married with sweet maple syrup creates a flavorful salad with seasonal spinach. Use Minnesota maple syrup, if you can!
Students explain the value of the beef cattle industry, including the products cattle produce, the production process from farm to plate, and how cattle can utilize and obtain energy from grass and other forage.
