But it is as a Gastronome that Nicolas expresses his commitment. Former Académie de Gastronomes perpetual secretary Nicolas is now board member of the Académie Internationale de la Gastronomie (AIG).
Nicolas is a lecturer at the Università degli Studi di Scienze Gastronomiche di Pollenzo (Italy), and is fighting « for good » with his humanist book "Tik Tak Took - Let's Cook" that will be released in 2026/27
He co-founded in 2018 the collection of « les menus de l histoire » a journey into the gastro-diplomatic world. 4 books (Menus de Légende De Gaulle A Table. Versailles Thé Gastronomic Revolution. 1855 Culte & cultures)... 20 kilos and more than 1200 pages of magical culture….
