ETHAN WUNIBALD
BONING KNIFE. 1945
Steel blade, hickory handle
Granted to author by Lewis Berlowitz
This mid-1900s boning knife was part of a butcher’s knife set. It is less engineered than many modern consumerist tools, yet it is as sharp and functional as it ever was. Its blade is evidently narrow, showcasing the years of sharpening that have maintained its edge. A trace marking indicating its producer is visible but illegible upon close examination of the handle. The purpose of this tool is carving meat which is a rare practice in today’s standard of industrial farming.
