食品栄養学研究室は農芸化学科設置(1907)と同時に農芸化学第二講座（食品栄養化学、家畜飼料化学）として創設されました。初代は大島 金太郎 教授で、家畜飼料や食品の分析的な研究を行いました。その後、高橋 栄治 教授(1924～46)が水産専門部より移り、道産農水畜産物の食品化学的研究を行いました。伊藤 信夫 助教授(1946～58）、伊藤 光治 教授(1958～59)の間は脂肪関連物質、不飽和ケトンや有機硫黄化合物についての研究が行われました。伊澤 正夫 助教授（1961、62～80 教授）となり、生化学的あるいは有機化学的な手法を用い食品成分中特に植物の成分分析、植物の炭水化物代謝と酵素の関係に関する研究を行っていました。その後、桐山 修八 教授（1982～94）を迎え、実験動物を用いた栄養生理学的な手法を用いた研究を重点的に行うようになりました。特に食物繊維の生理作用に関する研究は内外によく知られています。現在の研究室の特色はこの時期から形成されたと言えるでしょう。その後、葛西 隆則 教授（1994～97）、青山 頼孝 教授（1997～2003）となり、実験動物を使った栄養生理生化学的な個体レベルの研究を中心に行いました。原 博教授（2003～2019）は、個体レベルで得られた現象の機構を明らかにするべく代謝物の解析や培養細胞等を用いた細胞・分子レベルでの研究を展開しました。現在、石塚 敏 教授（2019～）となり、現状の知見を基に、食品成分の生理作用に関する研究に加え、健康と疾患の境界を明らかにするための研究を行なっています。

This laboratory was established in 1907 as the second laboratory of agricultural chemistry (nutritional chemistry and the chemistry of livestock feeds), at the same time as the department of agricultural chemistry was established. Professor Kintaro Oshima was the first professor of this laboratory. He conducted research into livestock feeding for domestic animals and analysed food components. Professor Eiji Takahashi (1924–1946) conducted food chemical studies on food materials in the Hokkaido Prefecture. Associate Professor Nobuo Ito (1946–1958) and Professor Kouji Ito (1958–1959) studied lipid-related components, unsaturated ketones, and organic sulphur compounds. Subsequently, Associate Professor Masao Izawa (Professor from 1961 to 1980) investigated the chemical analysis of plants, as well as the relationship between carbohydrate metabolism and enzymes in plants, using biochemical and organic chemical techniques. Professor Syuhachi Kiriyama (1982–1994) focused on nutritional physiology and the effect of dietary factors on experimental animals. He is renowned for his studies on dietary fibres as non-digestible dietary components. His involvement marked a significant period in the history of our laboratory. Professor Takanori Kasai (1994–97) and Professor Yoritaka Aoyama (1997–2003) studied the nutritional biochemistry of experimental animals. Professor Hiroshi Hara (2003–2019) expanded the field to include the molecular aspects of mechanisms and metabolite analyses using analytical instruments, based on animal studies as well as traditional experimental techniques in nutrition. Professor Satoshi Ishizuka (2019–present) is investigating the border between health and disease, and the physiological influence of food components.
