To bake a wilde boar: Take three parts of water and the 4th of white wine. Let the Boare boil until almost cooked. Take it out of the broth then let it lie until it is thoroughly cold. Then lard it and lay it in coarse pastry in pasties and then season it with pepper salt and ginger.
(Recipe goes on to twice bake but we don't need to)
Substitute pork loin or pork pieces for Boare, and chopped bacon for larding if lardons cannot be sourced.

First prepare or purchase a fine Manchet loaf. Thinly slice your gourd, salt it and spread good butter upon your Manchet and trim it's edges and place the gourd within. Serve with strained bitter leaves in which the spoon standeth up in. Do not shovel your gourd into your mouth but hold delicately between finger and thumb lest you be thought a peasant.
Place thinly sliced leaves, small onions and gourd in vinegar, water and sugar and allow to steepe.
Take good local cheese and serve with chutneys and pickles.
