To me tamales are very important, they symbolize my Mexican heritage through the passing down of this food. They are made with pork and masa and wrapped in corn husks and cooked over night with a few seasonings and special ingredients that are like icing on the cake. We make it on Christmas every year it is a long process an hour prep, three hours of construction and twelve hours cooking.
