Mazagran was reportedly invented by the French Army during the Battle of Mazagran in Algeria, in February 1840. It was a battle between the French and the Arab and Berber forces as part of France's 17-year-long conquest of Algeria. The French ran out of milk and added water to their coffee, deciding to drink it cold to combat the heat.

Café Mazagran, or as we know it, Iced Coffee, was later served to customers in tall glasses by French café owners. Over the years, Iced Coffee has taken on different permutations in different countries. In Austria, it includes an ice cube and a shot of rum. In Catalonia and Portugal, it is served with a slice of lemon. Sometimes, however, it is served with hot water, showing how Iced Coffee transformed from its Mazagran roots to its own distinct beverage. Iced Coffee is served strong, with sweetened, chilled condensed milk in Vietnam. Germany adds ice cream and calls it "eiskaffe".
