When you think about Japanese food, most probably the first food you come up with is sushi. It is now enjoyed in various ways and places; as high-class food, as conveyor belt sushi and the number of sushi restaurants is booming internationally.
The original sushi was totally different as it is now. It was actually fermented food which was called "Nare-sushi" brought from a mountain area in southeast Asia in the 8th century. The mountain tribes kept fresh water fish in fermented rice to store them for a long time.
Sushi has been started being served as it is now in "Nigiri" style since Edo-era (1820s - 1830s) in Edo which the name how Tokyo was called in the past.
It must be different and a great experience to actually try sushi in Japan.

Ginza Kyubey is a high-class sushi restaurant opened since 1935 in Ginza, Tokyo.
It is one of the well-known sushi restaurants in Japan as some celebrities have visited. For example, Naonari Shiga who is a Japanese famous novelist loved the restaurant. Also a former president of America Barack Obama visited and had a conference with a former prime minister of Japan Shinzo Abe at the restaurant, and he commented "The food was the best that I have had in Asia".
The first owner Hisaji Imada was the first person who invented Gunkan-maki which is a style of sushi wrapping rice and putting toppings on the top to use sea urchin and salmon roe which were not suitable as sushi toppings. Also he introduced other techniques and gave a big impact on sushi culture.
Meanwhile, the second owner Yosuke Imada focused on gaining a number of customers and expanding the business. Now, Ginza Kyubey has 6 branches in Tokyo and 1 branch in Osaka.

Since some people get nervous eating at a high-class restaurant and this may result in not enjoying the food or feeling not as tasty as it should be, all employees in Ginza Kyubey has a heart of "Omotenashi" which means hospitality in Japanese. For example, the chefs ask "How much pickled ginger do you want?", "How much wasabi do you want?" and etc. to try to converse with customers in friendly and professional manners to make them relax and enjoy the atmosphere as much as possible while preparing sushi in front of them.
The chefs observes each customer and serve sushi one by one at the best timing with their skillful knife handling.
As a response to an increase of number of foreign customers, many chefs also speak decent English to provide their top-notch service for all customers.

The main characteristic of sushi in Ginza Kyubey is rice. In general sushi rice is made with vinegar, salt and sugar, but they omit adding sugar in order not to mask the taste of fish itself. As gunkan-maki style of sushi invented here, you would feel special to actually try it at Ginza Kyubey.
