Below are some guides you might find helpful if you wish to export grades and/or quizzes.
This short ~1 minute video covers how to export your entire Canvas Gradebook as a .csv (Excel) file.

My recommendation for quizzes is to convert to New Quizzes so that you can easily create printable versions of your quiz. This way you can have a "hard copy" if needed. Classic Quizzes does not allow to you easily create printed versions.

If you would like to download all student submissions for an assignment, you can do so.
This will allow you to open them, add comments, and if you desire, re-upload them later so students can see your comments.
This could prove useful if Canvas goes down again.
