Irish Soda Bread
My mother adapted this recipe from my Great Grandmother. For those of you who are familiar with Soda Bread you will notice that there are no eggs in this recipe.
Ingredients
2/3 cup raisins
1 1/2 teaspoon of baking powder
1/4 teaspoon baking soda
1 heaping tablespoon sugar
2 cups flour
1 cup buttermilk
butter
combine raisins, baking powder and baking soda in a mixing bowl stirring with a wooden spoon until raisins are coated. Next add the flour and sugar and mix well. Now add the cup of butter milk and knead until you have a slightly sticky round loaf.
Preheat oven to 350 degrees
use butter to grease a 9 inch round baking pan
place dough in center of pan and carefully push down on it until it is 1 inch from edge of pan
using a sharp knife cut a cross in the top center of the loaf
bake for 30-45 minute until slightly golden brown
remove and spread a pat of butter over the top
eat warm or store wrapped in aluminum foil
(alternate recipe - any dried fruit will do like craisins as long as they are the size of a raisin so you may need to chop them up a bit)
