How to Make Mexican Fudge

Mexican Fudge is made with chocolate, marshmallows and cinnamon. If you would like a bit more spice, add a dash of cayenne pepper.

Ingredients:

2 cups of mini marshmallows

1.5 cups of semi-sweet chocolate chips

2 tbsp butter

2/3 cup of evaporated milk

1 2/3 cups of sugar

1/2 teaspoon salt

1 tsp cinnamon

1 tsp vanilla extract

Steps:

Step 1:  Prepare an 8 x 8 baking dish or pan by greasing it with butter or nonstick cooking spray.

Step 2:  Combine the marshmallows and chocolate chips.  Set aside.

Step 3:  In a saucepan, combine the butter, evaporated milk, sugar, salt, cinnamon and vanilla. Heat over medium-high heat for 2 minutes. Bring to a boil.

Step 4: Boil for 5 minutes, stirring constantly.

Step 5:  Remove the saucepan from the heat, add the marshmallow and chocolate chip mixture. Stir until the chips and marshmallows melt.

Step 6:  Pour the mixture into the prepared pan / baking dish.

Step 7: Allow to cool, then refrigerate for at least 90 minutes before serving.
